Sterling’s Steakhouse

Whether you’re in downtown Norfolk or the new Towne Place at Greenbrier (behind Target), you will surely have an enjoyable experience at Sterling’s.  We’ve recently gone to the Chesapeake location, a couple of times actually, and have never been let down.  The décor is contemporary and sophisticated.  The staff is pleasant and helpful.  My wife and I both had the Filet Mignon and they were both cooked to perfection (seared on the outside, pink on the inside).  While I had just the broccoli and rice with mine, she decided to try the barbeque bacon twice baked potato on the side.  At first glance it seemed like an odd combination but she loved it.  If you haven’t yet visited the Towneplace at Greenbrier, do so and definitely drop by Sterling’s for dinner.  You will love it!  Be sure to ask for Brad, he’ll treat you right.

Simple Oysters in the Shell

What You Need:

24 oysters in the shell
24 fresh lemon slices
Seafood cocktail sauce

How to Make It:

Clean each oyster shell top and bottom well.
The grill needs to be very hot to cook these. 
Place the oysters shell and all on the grill.
Close the lid.
Check every 3 minutes or so and when the shells begin to open remove them from the grill.
Carefully open the shell being sure to retain the juice and the oyster in the bottom shell.
Squeeze the fresh lemon juice over the top each oyster.
Serve with the cocktail sauce.

Be carefully not to over cook these oysters.  When the shell starts to open you want to remove them immediately.  If cooked to long they will become rubbery.

Tip of the month....

Water heater temperature:

-Most water heater manufacturers recommend a safe water temperature set at 120 degrees f.
-Hotter water reduces the risk of bacteria related water born problems but increase risk of scalding.
-Water temperature above 140 degrees F.is subject to immediate adjustment
-Temperatures above 160 take aprox. ½ second for scalding
-Temp above 150 take aprox 1 ½ seconds
-Temps above 140 less than five seconds
-Temps above 130 less than 30 seconds
-And 120 more than five minutes.

This is adult skin and is much more important for aged and youths. Recommend checking your water temperature at the faucets with an accurate temperature thermometer and adjusting as required.

 

 

 

 

 

 

 

 

Cooking Tip

For the perfect baked potato, soak in heavily salted water for at least an hour before baking. When the potato is done cooking, you should be able to slit the top and push out the meat of the potato to create a great presentation.
